Snackilicious: Power Popcorn

Today is National Popcorn Day. For me, popcorn day happens about once a week. I absolutely love it. I typically eat it with no butter and plenty of popcorn salt. If you haven’t tried popcorn salt, I highly recommend it as it is more finely ground and sticks to the corn much better than table salt.

For today’s post, I was on a mission to give you new reasons to try popcorn.  If you aren’t making popcorn at home, read this earlier post on making it at home and caramel popcorn. I was, and still am, surprised to learn how many people had never made popcorn on the stove. The sounds, smell, and process of homemade popcorn is truly one of life’s simple pleasures.

POWER POPCORN

Before you start:

For best results prepare the seasoning mix before making popcorn. Add seasoning while the popcorn is still warm.

Adjust salt as desired.

Yellow versus white corn is completely up to personal preference. Yellow seems to have more hulls, but it pops up bigger and fluffier.

The ingredients:

Chili Lime

  • 12 cups freshly popped corn
  • 1 tablespoon sea salt
  • 1 tablespoon lime zest
  • 1 teaspoon dried red pepper flakes

Lemon Thyme

  • 12 cups freshly popped corn
  • 2 teaspoons sea salt
  • 1 tablespoon lemon zest
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon fresh thyme leaves

Dark Chocolate Clementine

  • 12 cups freshly popped corn
  • 1 teaspoon sea salt
  • zest of two clementines
  • 3 tablespoons confectioners’ sugar
  • 2 ounces dark chocolate

The method:

Chili Lime

  1. Combine all ingredients in a coffee/spice grinder. Blend until powder-like.
  2. Sprinkle over popcorn and stir or shake in a big bag.

Lemon Thyme

  1. Combine salt, zest, and dried thyme in the grinder. Blend until powder-like.
  2. Sprinkle over popcorn. Sprinkle the fresh thyme over popcorn.
  3. Stir or shake in a big bag.

Dark Chocolate Clementine

  1. Combine salt, zest, and sugar in grinder. Blend until powder-like.
  2. Sprinkle over popcorn. Shave dark chocolate over popcorn.
  3. Stir or shake in a big bag.
