Peter Cottontail has come and gone and you have more boiled eggs than you can handle. Enter the deviled egg. An American classic – the deviled egg, in one form or another, has been around for hundreds of years.
Today we offer up 3 varieties of the picnic staple. We have taken inspiration from a couple of our favorite flavor combinations to put a new spin on the expected. Try one or all of these for dinner tonight or at your next gathering.

DEVILED EGGS 3 WAYS
Before you start:
You should know that boiled eggs can be pesky. If you have ever tried to peel one and ended up with more of the meat on the shell than on the egg, you know what I mean. The main cause is freshness. The fresher the eggs, the more likely they are to stick to the shell. Try to use your oldest eggs for boiling.
Pesto Inspired Deviled Eggs
The ingredients:
- 4 egg yolks
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 ½ tablespoons ground pine nuts
- 2 tablespoons finely chopped basil
- 1 tablespoon finely chopped parsley
- 1 tablespoon grated parmesan cheese
- 1 teaspoon olive oil
- Salt to taste
The method:
- Grind the pine nuts in a food processor.
- Mash the yolks together with the pine nuts.
- Add the mayonnaise, mustard, and olive oil.Mix until smooth.
- Add remaining ingredients and mix just until incorporated.
- Put mixture into zip sandwich bag and cut tip from one corner.
- Pipe mixture into egg half.
- Garnish with parsley.
BLT Inspired Deviled Eggs
The ingredients:
- 4 egg yolks
- 2 tablespoons mayonnaise
- ½ teaspoon yellow mustard
- 3 slices of bacon (cooked)
- 4 leaves of spinach finely chopped
- ¼ medium tomato finely chopped
- 1 tablespoon finely chopped red onion
- Salt to taste (bacon will add salt, take care)
The method:
- Mash yolks.
- Add mayonnaise and mustard. Mix until smooth.
- Add remaining ingredients. Mix only until incorporated.
- Put mixture into a zip sandwich bag and cut the tip from one corner.
- Pipe mixture into egg half.
- Garnish with onion sliver and a small piece of bacon.
Classic Deviled Egg
The ingredients:
- 4 egg yolks
- 1 ½ tablespoons mayonnaise
- 1 teaspoon yellow mustard
- 6-8 dashes of hot sauce of choice
- 1 tablespoon dill relish
- 1 tablespoon sweet relish
- Salt and pepper to taste
The method:
- Mash the yolks
- Add the mayonnaise, mustard, and hot sauce. Mix until smooth.
- Add the remaining ingredients. Mix only until incorporated.
- Put mixture into zip sandwich bag and cut the tip from one corner.
- Pipe mixture into egg half.
- Garnish with a sprinkling of paprika.
Easy boiled eggs:
- Place uncooked eggs in a medium saucepan.
- Fill with enough water to cover the eggs plus one inch.
- Cook on high heat.
- Bring to a boil.
- When the pot starts to boil, turn it off and cover the eggs.
- Allow eggs to sit on the stove in a covered pot for 15 minutes.
- Remove from the stove and fill with cold water.
- Pour out the cold water and refill to cool the eggs.
